If you’ve been stepping in any Asian grocery stores lately, you might notice some woody colored and triangular shaped objects piling up in the vegetable section. These are fresh bamboo shoots, and no one can be more trilled than me seeing fresh bamboo shoots are finally available in the market!

Bamboo shoots are very high in fiber and protein. In addition, it is very low in saturated fat and cholesterol. Eating cooked bamboo shoots straight up can be too rough for our bodies to digest. That’s why this recipe incorporates pork belly, utilizing its fattiness to balance off the rough texture of the bamboo shoots.

Stir Fry Bamboo with Marinated Pork Belly

Ingredients

  • 2 large fresh bamboo shoots
  • 1/2 lbs of cubed pork belly
  • 5 garlic cloves
  • 4 red jalapeños
  • 2 stalks of scallion
  • 2 Tbsp olive oil
  • 1 1/2 Tbsp of salted black beans (??)
  • 1 Tbsp of soy sauce
  • small pinch of granulated sugar
  • For the Marinade
  • 1 Tbsp soy sauce
  • 1 Tbsp Chinese cooking wine (??), can substitute with sherry or rice wine

Directions

  • Marinate the cubed pork belly in 1 tablespoon of soy sauce and 1 tablespoon of Chinese cooking wine for 30 minutes.
  • Peel and remove the dry ends from the garlic cloves then chop the remaining into small pieces. Discard the scallion stems and chop the remaining into small pieces. Remember to save some white parts for garnishing. Discard the jalapeño stems and also chop the remaining into smaller cubes.
  • Preparing fresh bamboo shoots can be daunting at first, but you’ll get the hang of it after few practices. Run the knife on the side of the bamboo shoot but don’t cut through it. Peel off the tough layers from the opening. Don’t be scared if you feel like you are taking out too many layers. Usually the softer, edible section is only about ½ of the original size. Carefully use the knife and slice away any fury layers till smooth and clean, especially the fury tip of the bamboo. Cut off the root end. Chop the final product into cubes.

  • Drizzle about 2 tablespoons of olive oil to the pan, enough to evenly coat the surface and turn to medium high heat. Add in the garlic, scallion greens, and jalapeños. Give it a quick stir and cook till the garlic turned slightly browned on the edges.
  • Add in the pork belly along with its marinade and cook till the fatty oil renders a wee bit, about 2 minutes.
  • Add in the bamboo shoot cubes and stir fry for 2 minutes.
  • Pour in the soy sauce, salted black beans, and a small pinch of sugar to balance off the salty flavors. Cook for another 2 minutes then top the pan with a lid. Slightly lower the heat and let the ingredients simmer in the seasonings for about 3 minutes.
  • The bamboo shoot cubes should soak in all the wonderful flavors yet still remain crunchy once finished cooking. Transfer to a plate and garnish with some chopped scallion, the white section saved earlier.
