Grilled Yam Steak Sandwiches with Apple Coleslaw

The weather has finally warmed up and I decided to do some grilling in February! These steak sandwiches are gluten-free, and loaded with a lot of healthy vegetables. It’s like your yam fries are the bread for your sandwich. It kills two birds with one stone.

Apple Coleslaw

Ingredients

  • 1/2 Gala apple, thinly sliced
  • 4 cups of green cabbage, shredded
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup apple cider vinegar
  • 1 tsp grainy Dijon mustard
  • 1/4 cup olive oil
  • 1 tsp honey
  • 1 tsp dry dill

Directions

  • Whisk together the oil, vinegar, Dijon, honey and dill. Mix in with the rest of the vegetables for the coleslaw and set aside. Season with salt and pepper.

Grilled Yam Steak Sandwiches (with Apple Coleslaw)

Ingredients

  • 8 1/2-inch slices of yam, seasoned with salt, pepper, and olive oil
  • 1 1/2 lbs of round steak, pounded flat, seasoned with steak spice, chili powder, salt and pepper
  • 3 cups of sliced brown mushrooms
  • 1/2 white onion, thinly sliced
  • 2 cloves of garlic, thinly sliced
  • 1/2 cup of organic beef stock
  • 1 Tbsp of butter
  • 1 tsp of olive oil

Directions

  • Heat up your grill to medium high heat, grill the yams until golden brown and soft. This will probably take 5-7 minutes. Grill the steaks until the desired cooking temperature is reached.
  • Saute the mushrooms, onions, garlic, butter and oil in a small pot and cook until the mushrooms are nice and soft and the onions are browned. Add the beef stock and reduce 75%.
  • Build open faced sandwiches with the yam on the bottom, and then a layer of Apple coleslaw, thinly sliced beef, and the mushrooms.
