Light Sunflower and Sesame Sandies by Sue Jas

Light, Crunchy Sunflower and Sesame Seed Sandies

These have got to be one of the easiest, healthiest, crunchiest, cookies ever. They are also very, very good. These seed filled cookies are similar to sandies except that they have less butter and seeds galore. We call them “crunchies”, giving just a hint to their texture. The sesame and sunflower seeds in addition to their numerous nutrients give these cookies a nice nutty flavor with an endless crunch.

They are foolproof and extremely easy to make. It really is a good thing the nuts fill you up quickly because they are so good, you’ll find it difficult to stop munching! The unbaked dough wrapped in plastic will keep well in the freezer for over a month. Also, if not baking the whole long at once, it will easily keep in the fridge for a couple days. Really, what is not to like about these crunchies?
