Vegan Curried Chickpea, Tomato, and Quinoa Salad

Tomorrow at work, I’m bringing an entrée for lunch with colleagues! In France there is still the three course meal for lunch – entrée, plat, et dessert. It’s not done every day, but for me, today is a perfect day for an exception. With no time to go to the store – homework review for four, showers to supervise for two, laundry to get done, and a right arm still at work – my meal not only needed to be quick, it needed to be available in the cupboard. After a look through the cupboard I decided to make this quick chickpea chutney for a quinoa salad!

Curried Chickpea, Tomato, and Quinoa Salad from Jas in France

Vegan Curried Chickpea, Tomato, and Quinoa Salad

Ingredients

  • 1 jar of chickpeas (pois chiches), rinsed
  • 1 or 2 dried chili peppers (langues d’oiseau), roughly cut
  • 1 shallot (échalote), minced
  • 1 garlic clove, minced
  • 1/2 to 1 tsp of garam masala, cumin, turmeric, salt, and pepper
  • 1 Tbsp tomato paste
  • 1 cup of water
  • fresh cilantro (or parsley)
  • quinoa
  • 2-3 tomatoes, diced

Directions

  • Sauté the shallots and garlic with the chili pepper in a bit of olive oil for a few minutes.
  • Add the spices and stir for about 1 minute. Stirring will avoid having the spices stick to the bottom of the pot.
  • Add the tomato paste and stir for another minute. Then, add the water. Let the sauce reduce by 1/4th over low heat for about 15 to 20 minutes.
  • Add the rinsed and strained chick peas and let the mixture cool, transferring it from the pot to a small bowl.
  • Make the quinoa as you would rice, 1 cup of water for 2 cups of quinoa.
  • Dice the tomatoes, chop the parsley, add a little salt and pepper, and put everything together! Quinoa, chick peas, and tomatoes - beautiful.
