I love a good potato recipe — but then, I have a hard time thinking up a bad potato recipe. It’s a difficult food to get wrong, which is part of what makes it such a staple. Baked Potatoes are definitely a beloved dish in lots of households, and mine’s no different. This simple potato salad is inspired by the all-stars of baked potato ingredients: bacon, cheddar, and chives. It’s a rather indulgent dish, so it’s not one I’d recommend making often, but if a pot luck or picnic is on the horizon, it could be a great dish to bring to the party.
If you want to ease back on the calories, I’d recommend cutting down on the cheese, substituting the mayonnaise with greek yogurt, and swapping out turkey bacon for the bacon. I’ve tried it both ways, and it still tastes great.
