Do you want to impress your friends or family with an out of the ordinary breakfast? I recently planted an herb garden and had an abundance of basil so I decided to use it for breakfast. I also happened to have mascarpone cheese in the fridge. Why not join two yummy and interesting ingredients into a wonderful breakfast? Who would have thought that basil would be so perfect for breakfast? My husband and kids ate these up in no time. My daughter ate the pancakes without anything on them. These pancakes are sweet and moist with a hint of lemon and basil. If you are a lemon lover, kick up the lemon by squeezing the whole lemon instead of half.

Lemon Mascarpone Pancakes with Basil

Try this recipe with your kids. Your child can help with these pancakes by adding and measuring the ingredients, helping you add the basil (they can tear up the leaves) and squeezing the lemon (I would do this in a separate bowl to avoid the pits!). Lemon Mascarpone Pancakes

Sweet Lemon, Basil, and Mascarpone Pancakes


  • 1 cup of all-purpose flour
  • 1/2 cup of granulated sugar (can reduce if preferred)
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 1/2 tsp of cinnamon
  • 1 egg
  • 2 Tbsp of mascarpone cheese
  • 1 ¼ cup of low fat milk
  • 1 Tbsp of butter, melted
  • zest of one lemon
  • juice of 1/2 a lemon
  • 2 tsp of vanilla extract
  • 5 basil leaves, cut and shredded


  • In one bowl, mix flour, sugar, baking powder, baking soda, salt, and cinnamon together.
  • In another bowl, whisk together the egg, mascarpone, milk, melted butter, lemon juice, lemon zest, and vanilla extract.
  • Incorporate wet ingredients into dry ingredients and mix until moistened. Fold basil into the batter. Let batter sit for about 10-15 minutes at room temperature.
  • Pour 1/4 cup batter onto non stick pan or griddle. Flip as they cook and keep warm in the oven
  • until ready to eat.
  • Serve with vanilla butter or maple syrup!
