Chia Muffins from Gravity Bread

Healthy, Dairy-Free Blueberry Chia Muffins

Are you or your child on a dairy free diet? I created these muffins one morning when trying to create a healthy breakfast for my kids who are on a limited dairy diet. I wanted to create moist muffins that are full of nutrients for my whole family. These muffins are super easy to make, especially with the soak of the yogurt and the chia seeds occurring the night before. If your time is limited in the morning, just whisk the dry ingredients together in the bowl the night before. In the morning, you can easily finish the recipe in no time.

Plus, your child can help you bake these muffins by measuring, pouring, mixing and folding in the blueberries! Have your child pick a fruit of their choice in the muffins with some of their favorite spices (e.g. use peaches, blackberries, raspberries, etc). This recipe is super versatile and meant to have fun with!
