World Famous Chocolate Sacher Cake

The famous Austrian Sacher Cake was created in 1832 and since then the recipe has remained a secret. We are true chocaholics at home so I decided to bake my own special version of this cake for my mom’s birthday, it’s her favorite cake! I’ve been doing a little research for the past three weeks and with the help of a friend from Vienna I baked a delicious, very chocolaty and moist Sacher cake. Buy some fine chocolate and a good apricot jam and you’ll enjoy this cake at its best!

World Famous Chocolate Sacher Cake


    For the cake
  • 1/3 cup (5oz) butter
  • 1 cup (4oz) powdered sugar
  • 1/2 vanilla bean, scraped
  • 6 egg yolks
  • 6 egg whites
  • 2/3 cup (5oz) solid dark chocolate
  • 1/2 cup (4oz) sugar
  • 1 1/4 cup (5oz) flour
  • 2 cups (7oz) apricot jam
  • butter and flour for the cake pan
  • For the frosting
  • 1 cup (7oz) sugar
  • 1/2 cup (4fl oz) water
  • 1 cup (5oz) solid chocolate


  • Whip butter, icing sugar and vanilla pulp until creamy. Gradually add the egg yolks, keep beating until thick and creamy.
  • Melt the chocolate in a bain-marie and fold it into the batter. Beat the egg whites until stiff sprinkling in the sugar and continue to beat until stiff and glossy. Add it to the egg yolk mixture, sift over the flour and carefully fold with a cooking spoon.
  • Fill a lined pan with the mixture.
  • Bake in a preheated oven at 338ºF for 55-60 minutes.
  • Once baked allow to cool around 20 minutes.
  • Cut the cake in three layers.
  • Warm up the jam, stir until smooth and spread on the cake halves. Spread the jam all over the cake and allow to dry a little.
  • For the frosting, bring the water and sugar to boil (for about 5-6 minutes). Allow to cool.
  • Melt the chocolate in a bain-marie and, stirring, gradually add the sugar until it becomes a thick glaze. Allow to dry for a few hours, until the icing is hard.
